Flour Tortillas

3 cups AP flour
2 teaspoons baking powder
2 teaspoons salt
3/4 cup shortening
3/4 cup hot water
Combine flour, baking powder, and salt. Cut in the shortening till the mixture is crumbly. Add hot water, about 3/4 cup, and bring together until dough forms a ball. Cover with a dish towel and let sit for ~1hr.
Divide dough in to 10 - 12 balls. Lightly flour rolling area and roll each ball to about 1/8 inch thickness.
Cook in medium hot cast iron skillet about 1 to 2 minutes on each side.
